Khudri is the workhorse of Saudi dates: dark brown, wrinkled, firmly chewy and less sweet than Sukkary or Medjool. The flavour leans toward raisin and dried fig with a mild molasses note, and the texture holds up in cooking better than softer varieties. Half a kilo in a resealable acrylic box.

How to use:

• Chop into cakes, cookies and date bars — Khudri keeps its shape
• Simmer into a paste for maamoul filling
