Clean, pale hulled sesame seeds with the mild, milky sweetness they carry raw and the deep nuttiness they develop the moment they hit a dry pan. Sesame is the finishing seed of Egyptian and Levantine cooking — on bread, on dukkah, on halva, over roasted vegetables. The 100 g jar keeps them dry and sits easily beside the stove.

How to use:

• Toast in a dry pan for two minutes until golden and fragrant, then scatter over anything
• Grind with coriander, cumin, hazelnuts and salt to make dukkah
• Press into bread dough or sprinkle over simit and manaeesh before baking
